I’m a Licensed Professional Counselor and approved licensure supervisor (LPC-S #2011015154) in Missouri, Licensed Professional Clinical Counselor (LPCC #19238) in California, a Licensed Clinical Professional Counselor LCPC #180.018029) in Illinois, a certified Eating Disorder Specialist and Consultant (CEDS-C), and a Somatic Experiencing® Practitioner (SEP). With over 15 years of experience in the field, I specialize in working with individuals navigating eating disorders, trauma, body image distress, dissociation, and relational challenges.
From 2008 to 2021, I worked extensively across—residential, partial hospitalization (PHP), and intensive outpatient (IOP) levels of care of an eating disorder treatment center—holding leadership roles in clinical program development, operations, and regional oversight. I’ve also supervised numerous pre-licensed clinicians toward LPC licensure in Missouri and currently serve as a licensure supervisor in both MO and CA.
As the founding President of the St. Louis chapter of the International Association of Eating Disorder Professionals (iaedp), I helped foster a strong local community of professionals dedicated to eating disorder recovery. I currently serve as a Teaching Assistant with Somatic Experiencing International, supporting the next generation of practitioners as they deepen their understanding of trauma healing and nervous system regulation. I offer SE personal sessions for practitioners seeking credit at the Beginning Level.
In addition to my clinical background, I served as the Senior Vice President of Development and Compliance for a California-based behavioral healthcare startup, where I helped launch 15 treatment sites across the state.
I’ve maintained a private practice since 2010 and am now focused exclusively on outpatient therapy, offering a safe and grounded space for healing and connection. My approach integrates Internal Family Systems (IFS), which I began studying in 2009 under the model’s founder, Dr. Richard Schwartz, along with EMDR (trained in 2014), and Somatic Experiencing (2018) to support holistic and sustainable recovery.
Above all, I’m passionate about helping people come home to themselves—working through the parts of life that feel overwhelming, stuck, or disconnected, with compassion and clarity.
Rachael Mintz, RD, LD
Rachael is a Registered and Licensed Dietitian in the state of Missouri with more than 10 years of experience specializing in eating disorders, disordered eating, and co-occurring conditions. Passionate about fostering lasting recovery, Rachael creates a supportive, non-judgmental environment where clients can safely rebuild a healthy relationship with food and their body.
Her therapeutic approach draws from proven, evidence-based modalities, including:
Cognitive Behavioral Therapy (CBT) to gently challenge the thoughts, emotions, and behaviors that keep the eating disorder in place
Exposure and Response Prevention (ERP) to confront fears related to food, body image, and triggering situations, while building skills to resist compulsive behaviors
Motivational Interviewing to discover and strengthen each person’s own internal motivation for lasting change
Since 2015, Rachael has offered individualized outpatient nutrition counseling, partnering with clients to develop personalized goals and action plans while coordinating care with therapists, physicians, and other treatment providers.
From 2014 to 2022, Rachael worked extensively across residential, partial hospitalization (PHP), and intensive outpatient (IOP) levels of care at a local eating disorder treatment center. She held progressive leadership roles in clinical nutrition, program development and operations. Throughout this time, she ensured high-quality, evidence-based care while supervising numerous dietitians working toward their CEDS (Certified Eating Disorder Specialist) certification.
Rachael earned her Bachelor of Science in Dietetics from Southeast Missouri State University and completed her Dietetic Internship through Missouri State University. She holds active credentials as a Registered Dietitian (Commission on Dietetic Registration #86008928) and Licensed Dietitian in Missouri (#2013044019).
Rachael’s work is rooted in compassion, collaboration, and curiosity. Through an authentic, client-centered approach to nutrition therapy, she supports individuals in healing their relationship with food and their bodies—creating the foundation for lasting, sustainable recovery.

Starting therapy can feel vulnerable—especially if you’re used to holding everything together on your own. Aimee creates a space where you don’t have to do that. She is known for her compassionate, attentive, and deeply attuned presence, helping clients feel seen, supported, and met with genuine care at their own pace.
Aimee brings a thoughtful and well-rounded background to her clinical work. She began her career in outpatient addiction treatment, building a strong foundation in understanding the complexities of coping, behavior, and recovery. She then spent seven years in a specialized eating disorder treatment center, where she held roles across direct client care, program leadership, and national training. As a National Training Director, she supported multidisciplinary teams across residential, partial hospitalization (PHP), and intensive outpatient (IOP) levels of care—offering her a deep appreciation for both the clinical and human aspects of healing.
Aimee earned her Master’s in Counseling in 2016 and holds a K–12 school counseling certification. She has experience working in school settings supporting a wide range of emotional and behavioral needs. At Nurtari, Aimee brings flexibility, creativity, and an understanding of how challenges evolve across different stages of life.
She supports clients navigating anxiety, grief, life transitions, low self-esteem, eating concerns, identity development, and the impact of stress and overwhelm. Her approach is warm, collaborative, and grounded in curiosity—helping clients build insight, strengthen internal resources, and move toward sustainable, meaningful change. Aimee integrates client-centered, strengths-based, and solution-focused approaches with Cognitive Behavioral Therapy (CBT) and Compassion-Focused Therapy.
In alignment with Nurtari’s integrated care model, Aimee collaborates with a registered dietitian and other clinicians when appropriate, supporting whole-person care and deeper, more connected healing. Aimee is therapist who will meet you with presence, compassion, and respect for all parts of your experience.
